Domaine Désiré Petit Savagnin 'L'Essen'ciel', Arbois-Pupillin 2016 (FLD)

The Savagnin grape is the Jura's calling card when it comes to white wines.  Unique in style and make-up, it is the essence of the region.

Made in a traditional fashion, fermentation taking place in 600L oak barrels with regular bâtonnage (stirring of the lees) through its first 2-3 months, and then each week until bottling. Regularly topped up (presumably from wine in tank) to prevent oxidation and aged for 18 months in a closed demi-muid - quite a unique style of vinification for Savagnin, even in the Jura.
